Old English Thyme Syrup
A powerful, traditional herbal syrup made from fresh thyme and raw honey. Known for centuries as "poor man's medicine chest", this simple preparation is excellent for calming coughs, soothing sore throats, and supporting respiratory health during winter.

Ingredients
- 1 cup Fresh Thyme sprigs (or 1/2 cup dried)
- 2 cups Boiling Water
- 1 cup Raw Honey (local is best)
- Optional: Juice of 1/2 Lemon
The Process
- Prepare the Infusion: Place the fresh or dried thyme into a heat-proof vessel—a mason jar or teapot works perfectly.
- Steep: Pour the boiling water over the herbs. Cover immediately with a lid or saucer to trap the volatile oils in the steam. Let this steep for at least 20 minutes, or until the liquid is comfortably warm but not hot. The liquid should turn a rich amber colour.
- Strain: Strain the liquid through a fine mesh sieve or muslin cloth into a clean jar. Squeeze the herbs to extract every last drop of goodness, then discard them to the compost.
- Sweeten: While the infusion is still warm, stir in the raw honey until completely dissolved. If using lemon juice, add it now. Why raw honey? Adding it to warm (not boiling) liquid preserves its natural enzymes.
- Store: Seal the jar and store in the refrigerator. It will keep for 3-4 weeks. Take 1-2 teaspoons every few hours as needed.
